Breakfast of Champions

We cringe every time we hear a newly diagnosed diabetic tell us that they have started to eat more healthy and have switched to a bowl of oatmeal every morning for breakfast. What?! Most nutritionists, diabetes educators, and doctors agree that a low-carb diet is the way to go for diabetics. Guess how many carbs are in one packet of cinnamon and spice instant oats? 32 grams of carbs! Guess how many carbs are in two eggs? Less than 1 gram.

Give this breakfast a try!

At the start of the week, hard boil 5 eggs and refrigerate them in their shells. Each morning, toast a whole wheat English muffin (22 carbs), spread on a little margarine (I like earth balance, 0 carbs), peel and slice one hard-boiled egg, and place it over the two english muffin sides. If you have high cholesterol, talk to your doctor about having just the whites every other day. Add a small side of fruit, like half a medium grapefruit (10 carbs) or 4-5 strawberries (5 carbs), and you have a nutritious, lower-carb, higher-protein breakfast that will give you enough steam to make it to lunch.
